Denizen White Rum carries five years of age but arrives clear, filtered after maturation so the barrel adds texture without adding color. That is an old bartender's trick: you get the roundness of aged rum in a spirit that still disappears into a daiquiri the way a white rum should. The nose is sugarcane, green apple and light vanilla, the palate shows clean cane sweetness with coconut and soft spice, and the finish comes up crisp and dry rather than sugary. It is a working bottle more than a sipping one. Build it into a daiquiri, a mojito or a rum highball with plenty of lime.
