Dolce Cilento Watermeloncello follows the southern Italian tradition that produced limoncello: fruit steeped in neutral spirit, sweetened, and bottled without ageing so the flavour stays as close to fresh as a liqueur can get. Here the lemon is swapped for watermelon, which gives a pale pink liqueur with far more melon and far less candy than the idea suggests. The nose is fresh watermelon with a little green rind; the palate is sweet melon with light citrus over clean spirit; the finish is short, bright and refreshing. Keep the bottle in the freezer and pour it in small glasses after dinner, or top it with prosecco and soda.
