Dom Perignon Vintage 2008 P2 750ml

Dom Perignon P2 2008 is the second plenitude of that vintage, meaning the wine stayed on its lees in the cellar far longer than the standard release before disgorgement. The house works on the idea that a champagne passes through distinct windows of expression as it ages, and P2 is the second of those: more intensity, less fruit sweetness, sharper definition. Toasted nuts, dried citrus, iodine and a curl of smoke on the nose; preserved lemon, brioche and ginger over deep chalk on the palate; a very long, dry, precise finish. Serve it cool rather than cold, in a white wine glass, and give it time in the glass.
