Don Lorenzo Mezcal Espadín is a joven (unaged) mezcal made in Santiago Matatlán, Oaxaca, where mezcalero Antonio Hernández López roasts espadín agave in a traditional pit oven, mills it by tahona, ferments it in open air, and double-distills it in copper alembic stills. That process shows up in the glass as smoky, roasted agave up front, with citrus and mineral notes underneath and an earthy, faintly vegetal edge running through the finish.
