Dos Angeles Caidos High Proof Blanco is an unaged blue weber agave tequila bottled at 100 proof rather than the usual 80. Those extra twenty points are the whole point: less water means more of everything the still gave up, so the agave, the citrus and the pepper all arrive with more weight and hold their shape when a cocktail dilutes them. The nose is concentrated cooked agave with citrus oil and white pepper. The palate is big and sweet up front, then black pepper, brine and a green chilli bite. The finish is long and clean. Sip it neat with water on the side, or let it carry a margarita.
