Elijah Craig Barrel Proof Rye is Heaven Hill's Kentucky straight rye whiskey bottled uncut and unfiltered, taken straight from the barrel in small batches. The Elijah Craig name has been a bourbon label for decades, so a rye at full barrel strength behaves differently on the shelf: the corn sweetness pulls back and the grain steps forward. The nose is mint, dill and toasted oak; the palate runs peppery and dry with rye bread, dark chocolate, cinnamon and a caramel base holding it all together; the finish is long, spicy and warming. Add a few drops of water to open it up, or build a Manhattan with real backbone.
