Elijah Craig Single Barrel 15 Year is a Kentucky straight bourbon from Heaven Hill bottled from one cask after fifteen years in new charred oak. Age statements this long are rare on a bourbon shelf, and fifteen Kentucky summers push a whiskey deep into the wood: more tannin, more dried fruit, less of the young corn sweetness that carries a four-year pour. Expect a nose of toasted oak, caramel and dark cherry; a palate of brown sugar, leather, baking spice and a dusty char; and a long, drying finish with cocoa and tobacco. Pour it neat and give it ten minutes, or add a drop of water to lift the fruit.
