Empress 1908 0.0 Indigo is the non-alcoholic version of the indigo-coloured gin alternative from Victoria Distillers in British Columbia. Its colour comes from butterfly pea blossom, the same botanical the original uses, and it behaves the same way in the glass: add citrus or tonic and the shift in pH turns deep indigo to pink. Underneath the colour sit juniper-leaning botanicals and tea, giving a nose of pine, citrus peel and a faint floral note, a palate that runs dry and herbal rather than sweet, and a clean finish. Build it with tonic and a lemon wheel, or pour it anywhere a gin would go.
