About this bottle
A gin that pours indigo: Empress 1908 Original Indigo Gin takes its color from butterfly pea blossom, not dye, and shifts toward soft pink the moment tonic or citrus hits the glass. Victoria Distillers makes it in small-batch copper pot stills in Sidney, British Columbia, from eight botanicals — juniper, grapefruit peel, ginger, rose petal, cinnamon, coriander, the pea blossom, and the black tea blend served at the Empress Hotel in Victoria. At 42.5% ABV it drinks as a proper gin: juniper and bright citrus first, warm spice and an earthy tea base behind. The color show is the hook; the balance is why bartenders keep it.
