Espolón Cristalino Añejo starts as a fully-aged añejo tequila — rested a minimum of 12 months in American oak — and is then carbon-filtered to strip out the color the barrel added, while keeping the oak-driven flavor intact. That filtering is what defines the cristalino category: it looks like a blanco but drinks like an añejo, with caramel, vanilla, and oak notes riding underneath a clear, almost invisible spirit. Espolón, distilled in Los Altos, Jalisco, is known for its distinctive Día de los Muertos-inspired label art as much as for the tequila itself. Bottled at 80 proof, it works equally well neat or in a cocktail that calls for a smoother, more refined tequila.
