Espolon Extra Anejo is a 100% blue agave tequila from Destiladora San Nicolas in Los Altos, the highland stretch of Jalisco where red volcanic soil tends to give sweeter, more floral agave than the valley floor. Extra anejo is the longest-aged class in the category, requiring at least three years in oak, and this bottling carries a three-year statement on the label. Expect a nose of caramel, vanilla and dried fruit; a palate of toffee, cinnamon, roasted agave and toasted oak; and a long, sweet, softly tannic finish. Serve it neat in a copita or a snifter at room temperature; this is a sipping bottle rather than a mixing one.
