FaneKantsini Chato Agave 750ml

FaneKantsini Chato is a single-agave Oaxacan mezcal made from chato, one of the wild and semi-wild agaves that rarely make it into a bottle on their own. Like most traditional mezcal it is roasted in an earthen pit, which is where the smoke comes from rather than any additive, then crushed, fermented in open wood and twice distilled. Chato tends toward a softer, more vegetal character than espadin: roasted agave and wet stone on the nose, green herbs, citrus pith and gentle smoke across the palate, and a finish that dries out slowly. Sip it neat at room temperature, in small pours.
