Fidencio Clasico is a mezcal from Oaxaca, Mexico, made from 100% Espadin agave using traditional production methods rather than modern shortcuts. The agave pinas are roasted in an earthen pit before crushing and wild fermentation, then distilled in small batches, the process responsible for mezcal's signature smoke, distinct from tequila's steam-cooked, column-distilled style. Espadin is the most widely cultivated agave for mezcal, and here it comes through with smoke up front, followed by cooked agave sweetness, citrus, and an earthy, mineral backbone. It's an unaged, clear expression, so the agave and smoke character stay unmasked by wood. This bottle suits anyone getting into mezcal who wants a classic, pit-roasted Espadin as a benchmark.
