About this bottle
Fidencio Pechuga is the distillery's ceremonial bottling, made in Santiago Matatlan by taking an already finished mezcal and running it through the still a third time with seasonal fruit, spices and a raw poultry breast hung in the vapour path. The protein does not flavour the spirit so much as smooth it, and pechuga is traditionally made for weddings and saints' days rather than for everyday drinking. The nose is roasted agave, orchard fruit and soft smoke; the palate is layered with fruit, spice and a savoury undertow; the finish is long and clean. Sip it neat and slowly, and do not put it in a cocktail.
