Before bottling, Dickel chills the whisky and filters it through charcoal, the mellowing process that rounds the sharp edges off a high-rye spirit. It lands at 90 proof: peppery rye and baking spice up front, subtle fruit underneath, and a finish smoother than the mash suggests. The remaining five percent of the grain is malted barley. Charcoal mellowing is the whole argument here, rye bite without the burn.
