George Dickel No. 8 is the flagship Tennessee whisky from George Dickel Distillery in Cascade Hollow, distilled from a mash of roughly 84% corn, 8% rye, and 8% malted barley. Like all Dickel whisky, it's chill-charcoal mellowed before barreling — filtered through sugar-maple charcoal in a process similar to Jack Daniel's Lincoln County Process, which Dickel spells 'whisky' rather than 'whiskey' to mark the Scottish-inspired distinction. Bottled at 80 proof, it's smooth and mellow with caramel, light oak, and a touch of banana and vanilla, finishing soft rather than sharp. It's built as an everyday sipping-and-mixing whisky, priced and positioned as the more laid-back alternative to its Lynchburg neighbor.
