Green River Full Proof Wheated Bourbon is bottled at barrel entry proof by Green River Distilling Co., the Owensboro operation that works out of DSP-KY-10 — one of the oldest distilled spirits plant numbers still in use anywhere in Kentucky. Full proof means the whiskey enters the bottle at the same strength it entered the wood, with water added only at the front end of the process. Wheat sits in the small grain slot, so the extra strength arrives round rather than sharp: caramel and vanilla on the nose, honey, dark fruit and toasted oak on the palate, and a long, warm finish. Add a few drops of water and let it settle before the second sip.
