Hacienda De Chihuahua Plata is a sotol, not a tequila or a mezcal — it is distilled from Dasylirion, the desert spoon plant that grows wild across the Chihuahuan Desert and takes well over a decade in the ground before it is ready to harvest. Plata means unrested, so nothing sits between you and the plant itself. The nose is green and herbal, with pine, wet stone and a squeeze of citrus; the palate is grassy and mineral with white pepper and a faint thread of smoke; the finish is dry, clean and cooling.
