Hacienda de Chihuahua Sotol Platinum is an unaged sotol from the high desert of Chihuahua. Sotol is not agave at all: it comes from the Dasylirion plant, a spiky desert shrub that takes years to mature and is harvested wild across northern Mexico, and that difference shows up as a greener, more herbal spirit than tequila or mezcal. Platinum is the unrested expression, bottled clear so nothing is hidden. The nose is pine, green herbs and desert scrub, the palate turns to cooked sotol heart with grapefruit peel and white pepper, and the finish is clean and dry. Sip it neat, or swap it into a Paloma.
