The Heaven Hill Heritage Collection is the distillery's yearly showcase for extra-aged, barrel-proof Kentucky bourbon, and the 2024 edition follows the same rule as the rest: old stock, no proof cut, released once and then gone. Age this deep changes the shape of a bourbon, trading bright grain for depth. The nose runs dark caramel, dried cherry and seasoned oak, the palate is toffee and leather with baking spice and stewed fruit underneath, and the finish is long, warm and driven by wood. Pour it neat, add water a drop at a time until it opens, and give it more time than you think it needs.
