This is a single-cask Highland Park, drawn at twelve years from cask number 4505 and bottled on its own rather than married into the standard 12 Year. Highland Park distils on Orkney and dries part of its barley over island peat, which is where the house signature comes from — a heather-scented smoke, gentler and more aromatic than anything Islay produces. Expect honey, dried orange and a thread of fragrant smoke on the nose, a palate of heather honey, malt, ginger and light peat, and a finish where the smoke lingers longest. One cask means a finite number of bottles. Drink it neat, with a few drops of water.
