Highland Park 16 Year is an age-stated single malt from Orkney, where the distillery still floor-malts a portion of its barley and dries it over peat cut on the island. That peat is heather-rich rather than coastal, so the smoke here reads as aromatic and sweet instead of medicinal — the trait that separates Highland Park from Islay. Sixteen years builds on it: dried fruit, orange peel and honey on the nose, a palate of raisin, malt, dark chocolate and gentle spice with smoke woven through rather than layered on, and a long finish of heather smoke over oak. Drink it neat in a copita, water only if the wood needs opening.
