Hijos de Zoila is a mezcal bottled unaged, which is how most mezcal is meant to be met — nothing standing between the agave, the fire and the still. Traditional mezcal production roasts the agave hearts in an earthen pit before they are crushed and fermented, and that single step is the reason the whole category tastes the way it does. Expect wood smoke and roasted agave on the nose, a palate of cooked agave sweetness, green herbs, citrus peel and a mineral edge, and a dry, smoky finish. Drink it neat and at room temperature in a copita, in small sips, with orange and sal de gusano alongside.
