Cerulea is Holystone Distilling's contemporary gin, the modern style in which juniper shares the stage instead of running it. Contemporary gins are built around a lead botanical other than juniper — citrus, floral or herbal — which makes them easier to drink long and considerably more forgiving in a spritz. The nose here is bright and aromatic, citrus peel over soft pine; the palate floral and clean with coriander, lemon and a gentle sweetness; the finish short and crisp. It is a gin for people who find London Dry too austere to sip. Pour it with a good tonic and a grapefruit twist, or shake it into a sour.
