Holystone Distilling Lazarette Barrel Aged Gin 750ml

Lazarette is Holystone Distilling's barrel aged gin — gin given time in wood, which is older practice than clear gin, back when spirits travelled in casks whether anyone intended it or not. Wood softens juniper's sharper edges and adds a whiskey-adjacent layer without turning the spirit into whiskey. The nose brings vanilla and warm oak over pine and citrus peel, the palate runs to juniper, baking spice, honey and light char, and the finish is dry with lingering wood tannin. It belongs in stirred drinks rather than shaken ones. Try it in a Negroni, a Martinez, or an old fashioned built with gin in place of rye.
