Holystone Distilling's Normandy Apple Brandy is made in the style of Calvados, the apple brandy of northern France, where cider is fermented from a blend of apple varieties and then distilled rather than sweetened after the fact. The apple survives the still, which is the whole point of the exercise: baked apple and orchard blossom on the nose, a palate of cooked fruit, cider tannin, light caramel and a dry, faintly nutty middle, and a finish that stays crisp instead of turning sugary. It is a spirit that works either side of dinner. Sip it neat, pour it over one cube, or stir it into an apple brandy old fashioned.
