Hoste's Mezcal Negroni is a bottled cocktail that swaps gin for mezcal, a substitution that changes the drink more than it sounds like it should — smoke and roasted agave settle in underneath the bitterness where juniper used to be. The Negroni's equal-parts structure is forgiving that way. Expect wood smoke and orange peel on the nose, a palate of bittersweet red fruit, cooked agave, gentian bitterness and vermouth sweetness, and a long, dry, faintly smoky finish.
