Hoste's The Martini is a bottled version of the drink that is hardest to get right at home, where the variables are temperature, dilution and how long the vermouth has been open. Batching solves all three at once: the ratio is fixed, the vermouth is sealed away from air, and the only job left is getting the glass cold enough. Expect juniper and citrus peel on the nose, a clean, dry palate of pine, coriander and a faint saline note from the vermouth, and a crisp, bracing finish. Keep the bottle in the freezer, pour it straight into a chilled glass, and add a lemon twist or an olive.
