Iichiko Saiten is a barley shochu from Sanwa Shurui in Oita Prefecture, Japan, distilled from barley using a single or multiple distillation process typical of honkaku shochu, distinct from the neutral, mass-produced ko-rui shochu category. Iichiko is one of the best-known shochu brands internationally, and Saiten sits toward the higher end of its range. Expect a clean, nutty, barley-forward nose, a smooth, delicate palate with a faint sweetness, and a clean, dry finish with a notably lower proof than most Western spirits. It's traditionally enjoyed with food rather than as a standalone strong pour.
