James Gin American Mustard is a contemporary gin built around a lead botanical you will not find in a London dry — mustard seed, used for its warm, pungent spice rather than for any heat. Juniper is still in there underneath, but the balance has been deliberately shifted toward the savoury end of the category. Expect mustard seed, coriander and juniper on the nose, a palate of warm spice, citrus peel and pepper over a dry botanical base, and a clean, spicy finish. It is a gin for savoury drinks: pour it over ice with a good tonic and a lemon twist, or use it to give a martini an edge.
