JCB Caviar is a blanc de blancs sparkling wine from Jean-Charles Boisset, the Burgundy-born winemaker behind the JCB label. Blanc de blancs means the wine is made entirely from white grapes, and that is what gives the style its lean, high-toned shape — citrus and chalk rather than red apple and weight. Expect green apple, lemon zest and brioche on the nose, a fine and persistent bead, a palate of citrus, white flower and toasted bread, and a dry, mineral finish. Serve it properly cold in a white wine glass rather than a flute, as an aperitif or alongside oysters and caviar.
