Joseph Cartron Vermouth Blanc is the white style from the Burgundy house at Nuits-Saint-Georges, a fortified and aromatised wine defined by its botanicals rather than by its colour. Blanc sits between dry and sweet: rounder and more floral than a French dry, cleaner and less spiced than a rosso. The nose is vanilla, chamomile and orchard fruit; the palate carries honeyed white wine, wormwood bitterness and a little citrus peel; the finish is gently bitter and dry. Once opened it belongs in the fridge, because vermouth is wine and it tires quickly. Pour it cold over ice with a twist, or use it in a white Negroni.
