Joseph Cartron Vermouth Rouge is the red, sweet style from the Burgundy house at Nuits-Saint-Georges, a wine base fortified and aromatised with wormwood and a spice bill that leans warm. It is dark, bittersweet and built for stirring. The nose is dried fig, orange peel and clove; the palate brings cola spice, vanilla and a firm wormwood bitterness that keeps the sweetness in check; the finish is long, bitter and faintly cocoa-like. Keep the bottle refrigerated after opening, since vermouth is wine underneath and it fades fast on a warm shelf. Stir it into a Manhattan or a Negroni, or drink it cold over ice with orange.
