Joseph Phelps Napa Valley Cabernet Sauvignon is the house's estate-fruit bottling, drawn from vineyards across the valley floor and hillside sites and made by the winery that gave Napa its first proprietary red blend. The 2021 vintage is firm and classically built: cassis, black cherry and cedar on the nose, a palate of dark fruit, graphite and dried herb over structured tannin, and a long finish that turns toward tobacco and oak spice. It is drinking now but has years ahead of it in a cool cellar. Decant it an hour before dinner and serve it with lamb, ribeye or anything off a hot grill.
