Kaiyō is a Japanese whisky matured in mizunara oak, the notoriously porous Japanese species that most distillers avoid because it leaks and takes decades to give anything up. This bottling draws on five different woods, so the mizunara's sandalwood and incense character sits alongside sweeter, fruitier cask influence rather than carrying the whisky alone. The nose is honey, toasted coconut and a wisp of temple incense; the palate is soft and layered with vanilla, ripe pear and warm spice; the finish is dry, woody and long. Wood-driven whisky rewards patience. Pour it neat in a tulip glass and give it ten minutes before the first sip.
