Knob Creek 9 Year Independence Edition is a Kentucky straight bourbon carrying a nine-year age statement, the maturation Knob Creek built its name on, dressed here in a special release label. Knob Creek sits at the fuller end of the Beam family: barrels are chosen for colour and depth rather than pulled young, and those extra years in new charred oak show up in the glass. Expect caramelised sugar and toasted nuts on the nose, a palate of vanilla, dark brown sugar and baking spice riding on a firm oak spine, and a long, drying finish with a char edge. Drink it neat, or over one large cube.
