La Fée Blanche Absinthe Supérieure is a clear, uncoloured absinthe made with grande wormwood, green anise and fennel — the three botanicals that define the category. Blanche skips the herbal colouring step that turns absinthe green, so it stays clear in the bottle and louches to a bright, opaque white the moment cold water hits it. The nose is anise and fennel with a cool herbal lift; the palate runs sweet anise, wormwood bitterness and a wash of mint and citrus; and the finish is long, dry and faintly numbing. Prepare it properly: three to five parts iced water dripped slowly over the pour, sugar optional.
