APHRO Moor from Mansa Spirits is a palm spirit, distilled from the fermented sap of palm trees rather than from grain, grape or cane. It draws on one of the oldest drinking traditions in West Africa, and it tastes like very little else on the shelf, funky and floral in a way that sits somewhere between a rhum agricole and a young mezcal. Expect tropical fruit, white flowers and a faint yeasty note on the nose, then green banana, coconut water and a mineral edge across the palate, finishing dry and slightly savoury. Try it neat at room temperature first, then in a highball with soda and lime.
