Manuscrito Tequila Blanco Chapter 1 is the opening release in a Jalisco series that treats each bottling as its own chapter. Unaged tequila is the honest format, with nothing in the barrel to hide behind, so the agave and the still do all the talking. Cooked agave leads on the nose, with citrus peel, white pepper and a little wet stone behind it. The palate is clean and slightly oily, sweet agave up front turning herbal and peppery at the back, and the finish is bright and dry with a mineral edge. Serve it neat at room temperature in a small glass, or let it anchor a margarita made with fresh lime.
