Manuscrito Tequila Blanco Chapter Two continues the Jalisco brand's numbered series, and like the first chapter it goes into the bottle unaged. Blanco is where a distillery's decisions show most clearly, in how the agave was cooked and where the spirit was cut, because there is no oak to soften anything on the way out. Look for cooked agave, lime zest and green herbs on the nose, a palate of sweet agave, cracked pepper and a touch of salinity, and a finish that runs clean and dry with lingering citrus. Pour it neat and sip slowly, or use it in a paloma where grapefruit and salt give the pepper something to push against.
