Mascota Rosa Blanco is the pink expression in this Jalisco tequila range, a blanco given colour, in the style that has quietly become its own small category on back bars. The agave character stays front and centre the way it should in an unaged tequila, with a softer, fruitier edge than a standard blanco carries. The nose is cooked agave, red berry and citrus peel, the palate is clean and lightly sweet with strawberry, pepper and a touch of vanilla, and the finish is crisp and dry. It also looks good in a glass, which is half the appeal. Serve it chilled and neat, or in a margarita or paloma.
