Michter's US*1 Toasted Barrel Finish takes whiskey that has already fully matured and moves it into a second barrel, one that has been toasted rather than charred, for a further stretch of ageing. Toasting caramelises the wood sugars slowly and without the smoke that a heavy char brings, which is why these bottlings taste baked rather than burnt. Expect toasted marshmallow, vanilla and dark caramel on the nose, a rich palate of brown sugar, stone fruit, cocoa and cinnamon, and a long finish of dry oak and warm spice. Released in limited batches. Drink it neat, or over a single large cube where it opens slowly.
