Moët & Chandon Ice Impérial is the house's demi-sec champagne, built specifically to be poured over ice rather than sipped straight from a flute. The higher dosage and fuller body are the reason it works: melting ice would hollow out a brut, but here it dilutes into balance instead. This magnum holds the equivalent of two bottles, which is the format the drink was made for. Tropical and stone fruit lead the nose with candied citrus behind. The palate is ripe mango and nectarine with rounded sweetness, and the finish stays fresh. Fill a large wine glass with ice cubes, pour over, and add mint or grapefruit zest.
