The blend leans on Chardonnay and Pinot Noir grown across Napa Valley, and time on the lees is what gives it the fine mousse and the faint bready edge that separate this style from simple fizz. Citrus and white peach open the nose with a hint of toast behind. Green apple and stone fruit follow on creamy bubbles, and the finish is crisp and dry. Serve it cold with oysters and fried food, or pour it into a mimosa.
