Negro Mate Mezcal Espadin is made from espadin, the agave behind most mezcal and the one that best shows the category's signature method: hearts roasted in an earth pit, crushed, fermented with wild yeast and distilled in small stills. That roast is where the smoke comes from, which is cooking rather than peat. Expect a nose of wood smoke, cooked agave and green herbs; a palate of roasted pineapple, citrus peel and black pepper; and a finish that stays warm and smoky. Sip it neat in a copita, or use it as the base for a smoky margarita or a mezcal negroni.
