Newton Napa Valley Unfiltered 2018 is a Cabernet Sauvignon from an estate whose vineyards climb Spring Mountain above St. Helena. Unfiltered is the house signature: the wine is bottled without fining or filtration, which leaves more texture and colour in the glass and means a little sediment near the end of the bottle is normal rather than a fault. The nose is blackcurrant, cedar and dried herb; the palate is dense and structured, with dark plum, cocoa and firm mountain tannin; the finish is long and savoury. Decant it an hour before dinner and pour it with a ribeye, roast lamb, or a hard aged cheese.
