Nicolas Feuillatte Reserve Exclusive Brut is the flagship non-vintage Champagne from a house built on a cooperative of thousands of growers across the region, which gives its blenders an unusually wide spread of villages and parcels to work from. The blend draws on the three Champagne grapes and rests in cellar before release. The nose is white peach, brioche and citrus; the palate is dry and fine-beaded, with apple, pear and a light toasty note; the finish is crisp and lemony. Serve it cold as an aperitif, alongside oysters or something fried, or use it as the base for a French 75.
