Nuestro Placer Blanco Tahona is a small-batch blanco tequila made the slow way, with cooked agave crushed under a tahona, the stone wheel that presses juice and fibre together instead of shredding the pina in a mechanical mill. Tahona pressing is labour-intensive and unhurried, and it tends to leave a rounder, earthier spirit with more weight on the palate. Unaged and bottled clear, the nose is cooked agave, citrus and wet stone; the palate is sweet roasted agave with olive brine, black pepper and a mineral core; the finish is dry and long. Sip it neat, or build a margarita around it.
