Old Elk works with a slow-cook mash and a low distillation proof, both of which keep more grain character in the spirit, and that matters when a blend has to hold its own against smoke rather than vanish beneath it. This one leans tropical and rich, showing dried pineapple, banana bread and brown sugar on the nose, a palate of molasses, vanilla and toasted oak, and a long, sweet-spiced finish.
