Old Elk Rum Cask Finished Rye is a straight rye whiskey moved into rum barrels for a second maturation, bottled here as a single barrel under the Dragonslayer selection. Rum casks push a rye somewhere unusual: the grain keeps its pepper and its dill, but the wood layers molasses and tropical sweetness over the top, and single-barrel bottling means this particular cask will never be repeated once it is emptied. Expect banana, brown sugar and mint on the nose, a palate of baking spice, caramel and rye pepper, and a long finish that turns dry and herbal. Neat is the way in, though it makes a striking whiskey sour.
